Instructor Memo (pg 2)In the real world of business, a restaurant must get the necessary "permits" before opening its doors.
Before you can establish your dream restaurant, the name and them of your restaurant must be approved by your instructor. To begin the process, you will complete a planning form to help organize your ideas. Once you have made some decisions about your new restaurant, you will create a memo to inform your instructor on what you have decided and why. Only after receiving approval from your instructor can you continue in this simulation. In this project, you will write a memo to your instructor seeking approval of your new restaurant. |
Restaurant Logo (pg 6)A logo is often the first thing potential customers notice about your business. A logo is a name, symbol, or trademark designed for easy recognition; for instance, the swish logo checkmark used by Nike or the white bitten apple seen on Apple products. Many companies will spend a lot of time and money to create the logo that they feel represents their organization to the public. Restaurants are not different. Having a recognizable logo that customers can identify with is essential in a market crowded with restaurant choices. It helps people become connected to your restaurant. In this project, you will design a logo for your restaurant to get your customers mouths watering before they even see the menu. The logo you develop will be used with different documents throughout this simulation.

Letterhead-Restaurant (pg 10) (video) A business letterhead, with its logo and contact information, makes an important first impression.
When opening a new restaurant, you will be communicating with many people. You will be writing to the media, vendors, customers, and future employees, to name just a few. A letterhead is not just a form of correspondence, it can be a method of branding or identifying your restaurant. In this project, you will design the letterhead for your restaurant. Be sure it projects a professional image and works well with the look and style of your restaurant logo. |
Business Envelope (pg 12)In order to communicate a consistent, professional image, the business envelope for your restaurant needs to match your letterhead.
Envelopes come in many shapes and sizes, but they all need to display the sender's and recipient's addresses. The standard size of a business envelope (No. 10 envelope) is 9.5 inches wide by 4.125 inches tall. Your restaurant's name and address (with or without a logo) goes in the top left-hand corner, with the recipient's address placed in the center. In this project, you will design the business envelope for your restaurant. |
Help Wanted Ad (pg 14)Your restaurant is set to open in a few months, so it is time to begin to interview potential new hires.
People seeking employment often look at the classified advertisements in a newspaper or job search websites. Placing a help wanted ad in a community newspaper is a great way to find local help. A well-written ad should always include the job title and description, company name, contact phone number and address as well as when and how people should apply. In this project, you will create a help wanted ad that clearly defines the type of employees you want to hire. |
Employee Memo (pg 16)Usually brief and to the point, memos are a common form of interoffice business communication.
Now that interviews have been completed and positions have been filled, it is important to consistently communicate with your new staff. A concise memo is an effective way to communicate with your new staff. Memos have a specific format that includes the date, the subject being discussed, the author , and the recipient(s). Unlike business letters, memos do not need a salutation or complementary closing. In this project, you will write a memo to all new employees to inform them about the mandatory upcoming training session and the required Employee Personnel Form that must be on file. |
Personnel Form (Not in Book)A personnel form is used by organizations to collect vital data about their employees. In this project, you will design a personnel form to collect important information about each of your players.

Press Release (pg 20)A press release provides the media with information that their audience will find interesting and useful.
Since your restaurant is just getting started, you should use the power of the media to get some free advertising. Ever since you won The Food Connection's "Start Your Own Restaurant" contest, the local media has made you somewhat of a celebrity. You can take advantage of that recognition by preparing a press release to announce the grand opening of your restaurant. In this project, you will write a press release to send to the local newspapers, radio and TV stations. The more interesting your message, the better your chances are of having your even covered. |
Social Media Marketing (pg 24)
Social media can be a powerful tool to get your restaurant "liked by a wider community.
Many business use social media to post timely messages that customers find beneficial and want to share with friends. Your customers are connected to many other people who are potential customers. To get online traffic "in the door" of your restaurant, you will need to continually post new and interesting information. In this project, you will create a table listing ideas for social media messages. They can include text, photos, video, hyperlinks, or other information that might interest your customers. |
Promotional Flyer (pg 26)A promotional flyer is a relatively inexpensive way to announce an upcoming event.
Host a grand opening will help get people in the door of your new restaurant. This even will generate publicity for your restaurant, showcase your menu items, and begin building a customer base. Offering enticing menu specials and free tastings are ways to motivate customers to visit your restaurant. In this project, you will create a promotional flyer announcing the grand opening of your restaurant. Your flyer should clearly communicate information about the "where and when" of the grand opening with bold headlines and vivid images. |
Radio Commercial Script (pg 28)A commercial on local radio is a good way to create some buzz about your new restaurant.
You have decided to try and reach a broader audience by purhasing a 30-second radio commercial. To attact customers to your restaurant, you thought having a celebrity read your commercial might create some much-needed hype. In order to save time and money, you have decided to write your own script. Writing a script is like telling a story. It must communicate a clear, concise message. In order to help the celebrity you have hired to know when it's time for him/her to read, you need to create a chart with Cues (what's happening), Output (what the listener will hear), and Time in seconds (how long each cue will last). In this project, you will write a radio commercial script, outlining each part of your story. |
Business Letter (pg 30)A block style letter is a common format used in writing business letters.
When starting any new business venture, it is important to stay in touch with current issues and trends within your community and local marketplace. To do so, you have decided to join the Chamber of Commerce. The Chamber is an organization of local business owners who share contacts and expertise. To get the ball rolling and apply for a membership, you will have to write a professional business letter introducing yourself to the membership board. In this project, you will write a block style letter requesting membership in your local Chamber of Commerce. |

Employee Roster (pg 34)An employee roster is a list of basic information about each employee.
Depending on the size of your restaurant, the number of employees could range from a few to several dozen. No matter the number, an employee roster is a necessary tool for managing the personnel in your business. In this project, you will enter employee information into a spreadsheet. This will allow you to contact your employees quickly, compare wages, and help plan work schedules. You can also easily add or update employee information as needed. |
Music Playlist (pg 36)The songs selected for your music playlist should closely mirror the them and style of your restaurant.
People love music. It sets the mood for all sorts of occasions, including dining out. Music will play an important part in how customers feel about your restaurant. In this project, you will create a music playlist in a spreadsheet. Having information in a spreadsheet will make it easy to add and remove songs and change the order in which they are played. |
Equipment Inventory (pg 38)An equipment inventory list should include a description of each piece of equipment a business has in inventory.
Businesses use spreadsheets to store various types of information in order to stay organized and have the ability to retrieve data quickly. A spreadsheet containing a list of your restaurant equipment is a good example. In this project, you will create a spreadsheet to help keep accurate records of the equipment you have in inventory. Not only will this list of equipment be useful to you, but your accountant will also us this information when preparing financial records for your restaurant. |
Menu Planner (pg 40)A menu planner is a useful way to organize the menu items your restaurant will offer to its customers.
A restaurant menu should be visually appealing, well organized, and easy to read. For example, dividing a menu into sections for different food categories makes it easy for customers to find what they are looking for. In this project, you will use a spreadsheet to plan your menu. Be sure the menu reflects your type of restaurant. |
Employee Timesheet Table (pg 42)An employee time sheet holds information from the weekly time sheets submitted by each employee and calculates the total payroll amount for the week.
Good record keeping is important for managing staff payroll costs. Every week employees submit a time sheet to you indicating the number of hours they worked each day and the total hours for the week. In this project, you will create a spreadsheet where you will enter the information contained in the time sheets. This spreadsheet will provide you with an overall picture of the hours each employee worked and the total payroll costs for that week. The information will be used in preparing the Payroll Register. |
Revenue Projection (pg 44)Projected Revenue is the amount of money a business projects it will earn based on how much it expects to sell.
Yes, a restaurant is an exciting business, but you have to be profitable to stay in business. A good way to plan for the success of your restaurant is to estimate how much revenue your Menu Items could potentially bring in. In this project, you will create a spreadsheet to help you track the projected revenue for your restaurant's top-selling categories. Determining how much your restaurant is projected to bring in will help you budget for expenses. |

Business Card (pg 56)Your business card is a like a handshake that you leave behind after meeting someone.
A business card is a small, convenient way to share information about you and your business. It usually includes your name and title, business name and logo, address, phone number, e-mail address, website address, and any other contact information. In this project, you will design your restaurant's business card. Since you will hand these out to current and potential customers as well as business contacts, it needs to be appealing and professional looking. |
T-Shirt (pg 60)T-shirts can be a very effective form of advertising.
As a new business, your name needs to be out in public. During the grand opening of your restaurant, you will be handing out free T-shirts to the first 100 customers. As customers wear the T-shirt, your restaurant will be promoted around the community. In this project, you will design a promotional T-shirt that will capture the public's attention and help them remember your restaurant. Your design should reflect your restaurant's unique style. |
Floor Plan (pg 64) (video)A well-though-out floor plan is necessary for a restaurant's success.
Serving great food is important, but so is having a space that is fun and relaxing for customers. An efficient floor plan will also help your employees be productive and stay organized. In this project, you will lay out a floor plan so that the contractor can start working on your new restaurant. You will want to maximize the customer dining room, and keep enough space for the kitchen, other work areas, and storage. |
Mobile App (pg 68)Giving customers a free and useful mobile app for your restaurant is a smart idea.
since more and more people are using smart phones, you have decided to have a mobile app built for your restaurant. With a mobile app, customers can view your menu, make reservations, receive coupons, find you on a map, and stay connected on social media. In this project, you will design a home screen for your restaurant's mobile app. Your app developer will use your design to build an app your customers will find useful and enjoy using. |
Takeout Menu (pg 72)A restaurant menu makes an important, lasting impression on customers.
A menu is a list of food items offered by an establishment that serves food. But a well-designed menu should also highlight your restaurant's identity and unique style. This is true even of a takeout menu because it becomes a form of advertising once it leaves the restaurant. In this project, you will create a booklet-style takeout menu. Since this is a menu that customers will take home with them, it must include your restaurant's contact information and business hours. |

Employee Orientation Presentation (pg 82)Presenting company policies and job expectations to new employees needs to be clear and straightforward.
Most companies use a printed employee handbook to communicate company policies and procedures, but using a slideshow to highlight key points with your staff can be very helpful, too. A well thought-out presentation will convey a professional tone about working at your restaurant. In this project, you will prepare an employee orientation presentation that all new hires will view on their first day of employment at your restaurant. |
